Easy Peasy Salad

During busy weekdays, knowing dinner is only few minutes away makes me happy. On a hot day, if I am rushing around and I don't have the time to make complicated dish, salad is what I turn to. Depending on what ingredients you use, salads can be a real bundle of nutrition, which is beneficial when you are busy and tired. This recipe is for my mum, she always asks me how to make the dressing. I figured, if it's online she can access the recipe from anywhere, especially since I barely see her since I moved out .

Me and my flatmate get a delivery of organic produce every week and this week we got a lot of salad mixes and cucumbers, which was handy as it is warm and humid in Melbourne perfect weather for salad .

Easy Peasy Salad ( Serves 2)


1 Avocado 

1 Cucumber

2 Large tomatoes

300g Salad Mix


1 part Apple Cider Vinegar

2 part Extra Virgin Olive

1 tsp Seeded Mustard

Sea Salt ( to taste) 


Wash the cucumber and tomatoes. I use a salad spinner to wash the salad, if you don't have a salad spinner just put the salad in a colander and run it under cold water. Put them in a bowl and set it to the side

Prepare the avocado by gripping it gently and with a knife in the other hand, cut it lengthwise around the seed.  Open the two halves to expose the seed.  To remove the seed, gently tap the pit with a sharp knife, once the pit gets attached to the knife gently remove it. Once the pit is removed I just use a spoon to scoop it out straight into the bowl.

For the dressing I put all the ingredients for the dressing in a jam jar and shake it (Jam jars are great for making salad dressing, plus you get to reuse the glass). You can double the proportions of the dressing and keep what you don't use in the fridge for up to three days. Pour dressing onto the other ingredients and toss gently. Serve.

P.S. To serve 1 just use half the portions. To keep the other avocado half from turning brown from oxidation just put some lemon juice on the exposed parts of the avocado and put it in a closed container in the fridge.
